Chicken Caesar Salad with Ontario Asparagus

A simple upgrade to a classic Caesar salad. Ontario asparagus adds freshness, colour, and a satisfying crunch, while baby potatoes make it hearty enough for lunch or dinner.

Ingredients
  

  • 1 lb Ontario asparagus, ends trimmed
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 6 cups chopped romaine lettuce
  • 2 ½ cups cooked chicken, chopped (about 2 chicken breasts)
  • 1 cup cooked baby potatoes, halved
  • 1 red pepper, diced
  • ½ cup Caesar dressing
  • Optional Garnish: Parmesan cheese

Instructions
 

  • Toss asparagus with olive oil, salt, and pepper.
  • Fry or roast until tender-crisp. Allow to cool slightly, then cut into bite-sized pieces.
  • In a large bowl, combine the asparagus, romaine lettuce, chicken, baby potatoes, and red pepper.
  • Drizzle with Caesar dressing and toss gently to coat.
  • Finish with Parmesan cheese and serve immediately.

Notes

Tip: This is a great way to use leftover rotisserie chicken.
