Cheesy Baked Asparagus

Ingredients
  

  • 1 bunch Ontario asparagus, trimmed
  • 1 tbsp olive oil
  • salt and black pepper, to taste
  • 2 cloves garlic, minced
  • ½ cup cottage cheese (blended)
  • 1 cup shredded mozzarella cheese
  • Optional Garnish: Chopped parsley

Instructions
 

  • Preheat oven to 200°C (400°F) and grease a baking dish with olive oil.
  • Arrange asparagus in a single layer in the dish. Drizzle with olive oil and season with salt and black pepper. Add garlic.
  • In a blender, blend the cottage cheese then pour it over the asparagus. Top with mozzarella cheese.
  • Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped parsley and serve immediately.
