Chicken Caesar Salad with Ontario Asparagus
A simple upgrade to a classic Caesar salad. Ontario asparagus adds freshness, colour, and a satisfying crunch, while baby potatoes make it hearty enough for lunch or dinner.

Ingredients

Ontario asparagus, ends trimmed

olive oil
Salt and pepper, to taste

chopped romaine lettuce

cooked chicken, chopped (about 2 chicken breasts)

cooked baby potatoes, halved
1
red pepper, diced

cup
Caesar dressing
Optional Garnish: Parmesan cheese
Instructions
Toss asparagus with olive oil, salt, and pepper.
Fry or roast until tender-crisp. Allow to cool slightly, then cut into bite-sized pieces.
In a large bowl, combine the asparagus, romaine lettuce, chicken, baby potatoes, and red pepper.
Drizzle with Caesar dressing and toss gently to coat.
Finish with Parmesan cheese and serve immediately.
Notes
Tip: This is a great way to use leftover rotisserie chicken.
