Breakfast Sandwich with Ontario Asparagus

A great breakfast sandwich is all about texture, and Ontario asparagus brings a fresh spring crunch that pairs perfectly with egg, melted cheese and toasted English muffins.

Ingredients
  

  • 1 tbsp oil
  • 2 Ontario asparagus spears, trimmed
  • Salt and pepper, to taste
  • 1 egg
  • 1-2 slice(s) cheddar cheese
  • 1 English muffins, split and toasted
  • Butter/Margarine for English muffin
  • Tomato, sliced
  • Optional: Add mayo and/or Dijon mustard to this too!

Instructions
 

  • Heat oil in a skillet over medium heat. Add asparagus, season with salt and pepper. Cook for 3 - 4 minutes until tender-crisp.
  • Remove from the pan and cut in half.
  • Crack eggs into the skillet and cook to your preference. Season with salt and pepper.
  • Place cheese on the eggs during the last minute of cooking, to allow it to melt.
  • Assemble sandwich by layering the toasted English muffin with tomato, cheesy egg & and asparagus.
