
Asparagus Sushi Rolls
Fresh, crisp, and surprisingly easy to make at home, these Asparagus Sushi Rolls highlight the natural crunch of Ontario asparagus. Serve with soy sauce for a simple lunch, snack, or light dinner.
Ingredients
- ¾ cup sushi rice, cooked and cooled
- 1 tbsp sesame oil
- 1 tsp rice vinegar
- 1 tsp white sugar
- 6 Ontario asparagus spears, trimmed
- 6 nori sheets
- 1 tbsp sesame seeds, lightly toasted
- Soy sauce and/or wasabi, for serving
Instructions
- Cook sushi rice according to package directions. Let cool then toss with sesame oil, rice vinegar and sugar, until evenly combined. Set aside.
- Lightly cook Ontario asparagus so it keeps its crunch. Either steam, boil/blanch, grill or pan fry.
- Place a sheet of nori on a sushi mat or clean work surface with parchment paper.
- Use ⅓ rice on each nori and spread a thin layer, leaving a small border along the top edge.
- Roll tightly, sealing the edge with a little water if needed.
- Repeat with remaining ingredients.
- Slice each roll into bite-sized pieces (0.75 to 1 inch thickness).
- Serve with wasabi and/or soy sauce for dipping.
