Asparagus Sushi Rolls

Fresh, crisp, and surprisingly easy to make at home, these Asparagus Sushi Rolls highlight the natural crunch of Ontario asparagus. Serve with soy sauce for a simple lunch, snack, or light dinner.

Ingredients
  

  • ¾ cup sushi rice, cooked and cooled
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp white sugar
  • 6 Ontario asparagus spears, trimmed
  • 6 nori sheets
  • 1 tbsp sesame seeds, lightly toasted
  • Soy sauce and/or wasabi, for serving

Instructions
 

  • Cook sushi rice according to package directions. Let cool then toss with sesame oil, rice vinegar and sugar, until evenly combined. Set aside.
  • Lightly cook Ontario asparagus so it keeps its crunch. Either steam, boil/blanch, grill or pan fry.
  • Place a sheet of nori on a sushi mat or clean work surface with parchment paper.
  • Use ⅓ rice on each nori and spread a thin layer, leaving a small border along the top edge.
  • Roll tightly, sealing the edge with a little water if needed.
  • Repeat with remaining ingredients.
  • Slice each roll into bite-sized pieces (0.75 to 1 inch thickness).
  • Serve with wasabi and/or soy sauce for dipping.
