Asparagus Sushi Rolls
Fresh, crisp, and surprisingly easy to make at home, these Asparagus Sushi Rolls highlight the natural crunch of Ontario asparagus. Serve with soy sauce for a simple lunch, snack, or light dinner.

Ingredients

sushi rice, cooked and cooled

tbsp
sesame oil

tsp
rice vinegar
1
tsp
white sugar

Ontario asparagus spears, trimmed
6
nori sheets
1
tbsp
sesame seeds, lightly toasted
Soy sauce and/or wasabi, for serving
Instructions
Cook sushi rice according to package directions. Let cool then toss with sesame oil, rice vinegar and sugar, until evenly combined. Set aside.
Lightly cook Ontario asparagus so it keeps its crunch. Either steam, boil/blanch, grill or pan fry.
Place a sheet of nori on a sushi mat or clean work surface with parchment paper.
Use ⅓ rice on each nori and spread a thin layer, leaving a small border along the top edge.
Roll tightly, sealing the edge with a little water if needed.
Repeat with remaining ingredients.
Slice each roll into bite-sized pieces (0.75 to 1 inch thickness).
Serve with wasabi and/or soy sauce for dipping.
