Asparagus Chili Crunch Ramen & Salmon

Bold flavours, tender Ontario asparagus, and a drizzle of chili crunch make this an easy dinner that feels anything but ordinary. The richness of the salmon pairs perfectly with spicy noodles and fresh seasonal asparagus.

Ingredients
  

  • 2 salmon fillets
  • 1 tsp chipotle seasoning or chili seasoning
  • Salt and pepper, to taste
  • 1 tbsp oil
  • ½ lb Ontario asparagus, trimmed
  • 2 packages ramen noodles
  • 2 green onions, thinly sliced lengthwise
  • 1 red chili pepper, thinly sliced
  • 2 tbsp chili crunch, or to taste

Instructions
 

  • Season salmon with chipotle seasoning, salt, and pepper.
  • Heat oil in a skillet over medium-high heat. Cook salmon for 3 to 4 minutes per side, or until cooked through. Remove and set aside.
  • In the same skillet, cook Ontario asparagus for approx. 5 minutes until tender-crisp and lightly charred.
  • Cook ramen noodles according to package directions. Drain well.
  • Divide noodles between bowls. Top with salmon and asparagus.
  • Garnish with green onions and sliced chili pepper.
  • Finish with a generous drizzle of chili crunch and serve immediately.
