
Chicken Caesar Salad with Ontario Asparagus
A simple upgrade to a classic Caesar salad. Ontario asparagus adds freshness, colour, and a satisfying crunch, while baby potatoes make it hearty enough for lunch or dinner.
Ingredients
- 1 lb Ontario asparagus, ends trimmed
- 1 tbsp olive oil
- Salt and pepper, to taste
- 6 cups chopped romaine lettuce
- 2 ½ cups cooked chicken, chopped (about 2 chicken breasts)
- 1 cup cooked baby potatoes, halved
- 1 red pepper, diced
- ½ cup Caesar dressing
- Optional Garnish: Parmesan cheese
Instructions
- Toss asparagus with olive oil, salt, and pepper.
- Fry or roast until tender-crisp. Allow to cool slightly, then cut into bite-sized pieces.
- In a large bowl, combine the asparagus, romaine lettuce, chicken, baby potatoes, and red pepper.
- Drizzle with Caesar dressing and toss gently to coat.
- Finish with Parmesan cheese and serve immediately.

Tip: This is a great way to use leftover rotisserie chicken.
