Breakfast Sandwich with Ontario Asparagus
A great breakfast sandwich is all about texture, and Ontario asparagus brings a fresh spring crunch that pairs perfectly with egg, melted cheese and toasted English muffins.

Ingredients

Ontario asparagus spears, trimmed
Salt and pepper, to taste
1
egg
1-2
slice(s)
cheddar cheese
1
English muffins, split and toasted
Butter/Margarine for English muffin
Tomato, sliced
Optional: Add mayo and/or Dijon mustard to this too!
Instructions
Heat oil in a skillet over medium heat. Add asparagus, season with salt and pepper. Cook for 3 - 4 minutes until tender-crisp.
Remove from the pan and cut in half.
Crack eggs into the skillet and cook to your preference. Season with salt and pepper.
Place cheese on the eggs during the last minute of cooking, to allow it to melt.
Assemble sandwich by layering the toasted English muffin with tomato, cheesy egg & and asparagus.
