
Breakfast Sandwich with Ontario Asparagus
A great breakfast sandwich is all about texture, and Ontario asparagus brings a fresh spring crunch that pairs perfectly with egg, melted cheese and toasted English muffins.
Ingredients
- 1 tbsp oil
- 2 Ontario asparagus spears, trimmed
- Salt and pepper, to taste
- 1 egg
- 1-2 slice(s) cheddar cheese
- 1 English muffins, split and toasted
- Butter/Margarine for English muffin
- Tomato, sliced
- Optional: Add mayo and/or Dijon mustard to this too!
Instructions
- Heat oil in a skillet over medium heat. Add asparagus, season with salt and pepper. Cook for 3 - 4 minutes until tender-crisp.
- Remove from the pan and cut in half.
- Crack eggs into the skillet and cook to your preference. Season with salt and pepper.
- Place cheese on the eggs during the last minute of cooking, to allow it to melt.
- Assemble sandwich by layering the toasted English muffin with tomato, cheesy egg & and asparagus.
