Grilled Asparagus with Hummus

Ingredients
  

For the Asparagus

  • 1 bunch asparagus trimmed
  • 1 tbsp olive oil
  • Butter
  • 1-2 garlic cloves finely chopped
  • ½ tsp salt
  • ¼ tsp black pepper

For the Hummus

  • 1 can 400g chickpeas drained & rinsed
  • 2 tbsp tahini
  • 1 tbsp olive oil
  • 1 garlic clove
  • 1 lemon juiced
  • ½ tsp cumin
  • ¼ tsp salt
  • 3-4 tbsp water to adjust consistency

To Serve

  • 1 tsp olive oil
  • Fresh parsley
  • Pita or crusty bread

Instructions
 

  • Toss trimmed asparagus with olive oil, butter, garlic, salt, and pepper, then grill seasoned asparagus for 4–5 mins until lightly charred.
  • Blend all hummus ingredients until smooth.
  • Spread hummus on a plate, drizzle with olive oil, top with asparagus, parsley. Serve with pita or crusty bread.
