
Asparagus Grilled Cheese Sandwich

Ingredients
- 1 bunch Ontario asparagus ends trimmed
- Avocado Oil
- Sourdough Bread
- Vegan Butter
- Roasted Red Peppers
- Pickled Red Onions
- Hummus
- Vegan Cheese Shreds
Instructions
- Preheat oven to 425°F. Drizzle asparagus with avocado oil and place lemon slices on top. Roast for 15 minutes, turning halfway.
- Heat skillet or panini press over medium heat.
- Spread butter on one side of both bread slices. On the opposite side of one slice, spread hummus.
- Add vegan cheese, roasted asparagus, red peppers, and pickled onions. Grill sandwich for 3–5 minutes per side until toasted.
