Asparagus Grilled Cheese Sandwich

Need a high protein and fibre lunch? Well, look no further with this easy asparagus grilled cheese sandwich from Nicole Osinga.

Ingredients
  

  • 1 bunch Ontario asparagus ends trimmed
  • Avocado Oil
  • Sourdough Bread
  • Vegan Butter
  • Roasted Red Peppers
  • Pickled Red Onions
  • Hummus
  • Vegan Cheese Shreds

Instructions
 

  • Preheat oven to 425°F. Drizzle asparagus with avocado oil and place lemon slices on top. Roast for 15 minutes, turning halfway.
  • Heat skillet or panini press over medium heat.
  • Spread butter on one side of both bread slices. On the opposite side of one slice, spread hummus.
  • Add vegan cheese, roasted asparagus, red peppers, and pickled onions. Grill sandwich for 3–5 minutes per side until toasted.
