bunch Ontario asparagus
ends trimmed
Avocado Oil
Sourdough Bread
Vegan Butter
Roasted Red Peppers
Pickled Red Onions
Hummus
Vegan Cheese Shreds
Instructions
Preheat oven to 425°F. Drizzle asparagus with avocado oil and place lemon slices on top. Roast for 15 minutes, turning halfway.
Heat skillet or panini press over medium heat.
Spread butter on one side of both bread slices. On the opposite side of one slice, spread hummus.
Add vegan cheese, roasted asparagus, red peppers, and pickled onions. Grill sandwich for 3–5 minutes per side until toasted.
