Asparagus Pineapple Loaf
Ingredients
- 3 cups all purpose flour
- 2 cups sugar
- 2 tsp baking soda
- 2 tsp cinnamon
- ½ tsp salt
- 1 ½ cups vegetable oil
- 3 large eggs beaten
- 2 cups grated fresh asparagus
- 1 8oz can crushed pineapple undrained
- 2 tbsp frozen orange juice
- 2 tsp vanilla extract
Optional glaze
- ½ cup icing sugar
- 2 tbsp orange juice
Instructions
- Combine dry ingredients in large bowl.
- Add oil, eggs, asparagus, pineapple, orange juice and vanilla.
- Line 9 x 12 pan with parchment paper and pour in batter.
- Bake at 350° for approximately 30-35 or until you can insert and pull out a clean toothpick.
Optional glaze
- Combine until a paste is formed. Add additional orange juice to achieve desired consistency.
