Asparagus Pineapple Loaf

Ingredients
  

  • 3 cups all purpose flour
  • 2 cups sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • ½ tsp salt
  • 1 ½ cups vegetable oil
  • 3 large eggs beaten
  • 2 cups grated fresh asparagus
  • 1 8oz can crushed pineapple undrained
  • 2 tbsp frozen orange juice
  • 2 tsp vanilla extract

Optional glaze

  • ½ cup icing sugar
  • 2 tbsp orange juice

Instructions
 

  • Combine dry ingredients in large bowl.
  • Add oil, eggs, asparagus, pineapple, orange juice and vanilla.
  • Line 9 x 12 pan with parchment paper and pour in batter.
  • Bake at 350° for approximately 30-35 or until you can insert and pull out a clean toothpick. 

Optional glaze

  • Combine until a paste is formed. Add additional orange juice to achieve desired consistency.
