Asparagus Pineapple Loaf

Ingredients

all purpose flour
2
cups
sugar

tsp
baking soda
2
tsp
cinnamon
½
tsp
salt
1 ½
cups
vegetable oil
3
large eggs
beaten
2
cups
grated fresh asparagus
1
8oz
can crushed pineapple
undrained
2
tbsp
frozen orange juice
2
tsp
vanilla extract
Optional glaze
½
cup
icing sugar
2
tbsp
orange juice
Instructions
Combine dry ingredients in large bowl.
Add oil, eggs, asparagus, pineapple, orange juice and vanilla.
Line 9 x 12 pan with parchment paper and pour in batter.
Bake at 350° for approximately 30-35 or until you can insert and pull out a clean toothpick.
Optional glaze
Combine until a paste is formed. Add additional orange juice to achieve desired consistency.
