Creamy Lemon Hummus Asparagus Pasta

When life gives you Ontario asparagus? Pair it with a creamy lemon hummus pasta for an explosion of flavours. Recipe from Nicole Osinga.

Ingredients
  

  • 1 bunch Ontario asparagus ends trimmed
  • Avocado Oil
  • Lemon sliced thinly
  • Chickpea Pasta
  • Hummus e.g., dill pickle hummus

Instructions
 

  • Preheat oven to 425°F. Drizzle asparagus with avocado oil and top with lemon slices. Roast for 15 minutes, turning halfway.
  • Cook pasta according to package directions. Drain and save ½ cup pasta water.
  • Mix hummus with pasta water to create a creamy sauce. Adjust thickness as desired.
  • Divide pasta into 4 plates, top with asparagus, lemon wedge, and vegan parmesan (optional).
