
Creamy Lemon Hummus Asparagus Pasta

Ingredients
- 1 bunch Ontario asparagus ends trimmed
- Avocado Oil
- Lemon sliced thinly
- Chickpea Pasta
- Hummus e.g., dill pickle hummus
Instructions
- Preheat oven to 425°F. Drizzle asparagus with avocado oil and top with lemon slices. Roast for 15 minutes, turning halfway.
- Cook pasta according to package directions. Drain and save ½ cup pasta water.
- Mix hummus with pasta water to create a creamy sauce. Adjust thickness as desired.
- Divide pasta into 4 plates, top with asparagus, lemon wedge, and vegan parmesan (optional).
