Quick Stir-Fry Asparagus with Rice

Here’s an easy, flavourful stir-fry asparagus recipe, ready in under 30 minutes from Ayesha Rasheed.

Ingredients
  

  • 3-4 garlic cloves, minced
  • 1 inch fresh ginger, minced
  • 1 bunch Ontario asparagus, trimmed & chopped
  • ¼ cup red onions
  • ¼ cup green peppers
  • ¼ cup julienned carrots
  • 1 tsp soy sauce
  • ½ tsp black pepper
  • Salt to taste
  • 1 ½ cups cups cooked rice

Instructions
 

  • Sauté garlic and ginger in oil until fragrant.
  • Add asparagus, onions, peppers, and carrots. Cook on high heat for 3–4 minutes.
  • Toss in soy sauce, black pepper, and salt. Serve with rice enjoy.
